RECIPE 1

Fudge Brownie Protein Bars

Preheat the oven to 300 F. Combine all ingredients in a high-quality food processor, and blend until absolutely and completely smooth. (A blender works if you absolutely must, but the texture and taste will be much better in a food processor.) Pour into a greased (using coconut oil) 8×8 square pan. Optional: sprinkle extra chocolate chips over the top. Cook the homemade chocolate protein bars about 30 minutes. They will still look underdone when you take them from the oven, but this is okay. Let cool, then pat down with a pancake spatula. Store leftovers in the refrigerator. Makes about 10 bars.

RECIPE 2


Simple No-Churn Vanilla Choc Chip Ice Cream

  • 2 1/2 cups organic (ideally grass-fed) whipping cream 

  • 1 (14-0z) can organic coconut condensed milk 

  • 1 vanilla bean pod

  • 1 tsp organic vanilla extract

  • Dash Redmond's Real salt (optional) 

  • Dark chocolate chips, chopped (optional) (we used Pascha brand)

Using a whisk, firmly whip the whip cream in a glass bowl until it starts to firm up and form peaks, approximately 3-4 minutes. Stir in the coconut condensed milk and stir to combine. Cut open the vanilla bean pod and gently scrape out the black vanilla seeds. Mix the vanilla bean seeds, vanilla extract, and salt (if using) into the cream mixture. Lastly, stir in the chopped chocolate chunks, if using. Pour the ice cream mixture into a loaf pan and place in freezer. Allow to completely freeze, which takes approximately 6 hours. Enjoy!

RECIPE 3

“Red Velvet” Chocolate Pudding

Put all ingredients in a high-speed blender or food processor and blend until completely smooth. Garnish with raw cacao nibs or chopped nuts, if desired.

RECIPE 4

Simple Grain-Free Chocolate Chip Cookies

  • 3 cups (organic) almond flour

  • 1/2 cup grass-fed butter, melted

  • 1/4 cup unrefined coconut oil, melted  

  • 1/2 cup raw coconut sugar

  • 2 tsp organic vanilla extract

  • 2 eggs

  • 1/2 tsp baking soda

  • 1/2 tsp Redmond's Real salt

  • 1 cup dark chocolate chips (we used Pascha brand)

Preheat oven to 350 degrees and line a baking sheet with parchment paper or a silicone mat. In a large bowl, combine well the butter, coconut oil, and sugar until creamed. Add in the vanilla and eggs. Mix in baking soda and salt. Next add in the almond flour, one cup at a time and mix well. Fold in the chocolate chips. Drop by rounded tablespoonfuls onto the cookie sheet and bake for 10-14 minutes. Let cool, and enjoy!
