Double Dark Chocolate Protein Zucchini Muffins 

  • 1/4 cup Super Vital Foods Raw Cacao Powder

  • 1/4 cup soaked/sprouted whole wheat flour (OR buckwheat, almond or coconut flour for gluten free option)

  • 1-2 scoops NewZ Whey Protein Chocolate

  • 1 tsp baking soda

  • 1/4 tsp Redmond's Real salt

  • 3 whole eggs (ideally pastured eggs)

  • 1/4 cup Super Vital Foods raw cane juice crystals OR raw honey

  • 1/4 cup melted coconut oil or grass-fed butter

  • 1 tsp organic vanilla extract

  • 1 cup shredded zucchini (squeeze excess water out)

  • 1/4 cup (or less) raw chocolate chips or cacao nibs (optional, sprinkle 3-4 chips on each muffin)


Directions: Preheat oven to 285 F. Combine cacao powder, flour of choice, baking soda, protein powder, cane juice crystals and salt in a large bowl and set aside. In a separate bowl, mix eggs, oil or butter, and vanilla until incorporated. Pour the wet mixture into the dry and mix. Before you add the zucchini, be sure to squeeze out additional moisture. Then, add zucchini to the mix. Line a muffin pan with muffin liners. Sprinkle desired amount of raw chocolate chips on top before putting them in the oven. Bake for 35 minutes, or until a toothpick inserted in the center comes out clean. Remove from the oven and allow to cool completely. Enjoy!
